Kimchi

Kimchi is a Korea’s national dish and also a main ingredient for other Korean dishes such as kimchi stew, kimchi pancake, kimchi soup and kimchi fried rice.  The most common seasonings include brine, scallions, spices, ginger, chopped radish, garlic, saeujeot, and aekjeot. 



South Koreans consume on average 40 pounds of kimchi per person annually.  One serving of kimchi provides over 50% of the daily recommended amount of vitamin C and carotene. Health magazine has even named kimchi in its list of top five “World’s Healthiest Foods" for being rich in vitamins, aiding digestion, and even possibly reducing cancer growth.
