Hop hot is popular throughout East Asia countries although styles vary from region to region. Among enthusiasts differences also exist. In mainland China, more modern eateries offer the sectioned bowl with differently flavored broths in each section while more traditional or older establishments serve a fragrant, mild broth in the hot pot. In Taiwan, and people eat the food with a dipping sauce consisting of shacha sauce and sometimes with raw egg yolk as well. In Thailand, hot pot is called Thai suki and and a Thai-style dipping sauce with chili sauce, chili, lime and coriander leaves was added.
