When planning sanitary establishment, attention must be given to sufficient drainage and the flow direction of waste water. The flow needs to be limited to single direction from high clean areas to low clean areas. To avoid backflow problems sometimes a grease traps may be installed to prevent a buildup of grease from creating a drain blockage.
